Data Scientist or Natural Language Processing Analyst?

I am now finishing my master's degree, the main direction is linguistics. For my master's thesis, I plan to take natural language processing as a topic (but from the point of view of linguistics, not computer science), and while reading various articles, I became interested in the topic of analytics. I also saw the profession of Data Scientist, it also seemed interesting :)

What specialty do you think is more in demand: Natural language processing analyst or Data Scientist? They, as I understand it, are both related to machine learning and analytics (sorry, I'm completely new to this area). If I decide to go to NLP, will they look at my diploma (I graduate from a German university, I am fluent in English)? Will it be enough, for example, to study python in addition to a master's degree to find a job? I saw vacancies in Google, for example, or deepl, but is it really possible for a simple junior to get there :D

Or I thought in a year or two to reapply for a bachelor's degree, specifically for one of the specialties. I'm not old yet :D but wouldn't that be a waste of time? I must say right away that I also have a bachelor's degree in the humanities.

Definitely Data Science. There are not so many projects in NLP, and vacancies are mainly for gurus. It will be difficult for juniors to gain a foothold somewhere.
If you look from the point of view of subsequent demand, then I would recommend the Data Scientist profession. And yes, Python is also worth learning + mathematics will also have to be tightened up.
