Please tell me, there is an existing store, I want to switch to prestashop, I can upload prestashop to hosting and work on it without sharing it with a domain name that is occupied by me in the existing store. and after I finalize it, turn off the old site and work with my old domain on the new platform?

Why use a domain if you can transfer prestashop to a subdomain, for example test.youdomain.ru (instead of youdomain.ru - your domain name). It is also desirable to close the subdomain from indexing in robots.txt or to close the possibility of it altogether through .htaccess (for example, using .htpasswd).
the test site will be available on a subdomain (the engine itself will be located in a different directory (folder)), and the working site - on the domain. When the time comes - transfer the domain from the "old" section to the new one and will work on the old domain and the new engine.

вариант Алексей Курилкин - отлично сработает, но я бы все же поставил себе на комп openserver, разрабатывал бы на нем, а потом просто перенес на хостинг. На локалке проще намного работать.
