Changing files at any opening with Word, Excel, etc.

For a long time, a feature of Word or Excel (in particular from Office 2010) has been annoying - when you open documents, it changes the file modification date anyway. This is annoying because sometimes when searching for files, the date of creation or modification of the file helps, but here it goes astray anyway. Also, if the file was in the archive, then the archiver swears that the file has been changed and constantly offers to update the file in the archive. How to stop doing this in Word and Excel?
It is also annoying that if you take the value of a cell in Excel, select it and simply copy it somewhere outside, it immediately thinks that I have corrected something. And if the file has a read-only attribute, then it simply does not allow you to copy anything. Is it possible to wean him from doing this nonsense too?
