CentOS or other system? If different, which one and why?

For a new project, you will need to use various software, ranging from node, erlang, php, mysql, mongodb, redis, postgresql and ending with streaming servers.
It is very important at the initial stage to choose the system on which various required software will be installed and run without problems, and also that the system is reliable, like CentOS, both in terms of operation and in terms of security.
What would you recommend based on experience?

Generally the question is put a little incorrectly IMHO. You need to choose the OS that your administrator can support at the proper level of security. In my opinion, the security of the OS directly depends on the breadth and depth of its knowledge in this subject.
