To work and maintain with each PBX, you need to take your own courses, sometimes for more than one year, not counting a general understanding of how it all works.
voip is also a very broad concept - MS Lync, avaya, SIP, rtp/rtsp, asterisk - these are all individually very thick directions that take a very long time to deal with. and if you take all this, you need to deal with the full stack of tcp / ip, QoS, security and protection of voice traffic.
Separately, there are still issues of crossing different animals among themselves, such as making Lync and Asterisk friends with each other, for example.
