A couple of questions about Google Docs

Questions will be about functions that after the update I can not find:

1. Previously, it was possible to select a part of the text and mark it as "Quote". In the old documents, this possibility remained. The new ones don't have it.
Included as follows: Format - Paragraph Styles - Quote

2. Old documents come in the form of a boundless canvas. New documents go under A4, A3, etc. format. How are these formats disabled and old settings used?

The following should help you (at least on the 2nd point for sure):
Settings-> Settings Documents. In the window that opens, select the Modify tab, and there uncheck the "New version of Google Docs: Create text documents using the latest version of the editor."
