I had a problem buying a certain device, but unfortunately I didn't find the right model that meets my requirements, and I had an idea, maybe I should buy a small Arduino or Raspberry kit and create a similar gadget? Is it worth it for a small project?

After this stage, order someone or make a board yourself, where the whole classic Arduino "sandwich" will be implemented correctly.
It's more difficult with raspberries. You can't make a fee with LUT there. Although there are prototyping boards on ARMax. Similarly - debug on it, order someone to draw the board -> buy from the Chinese already with soldered elements.
