It will work, the only question is how long.
You must understand that the power supply of video cards is calculated based on the current consumed, and if you do not use the recommended number of power channels, you risk either getting unstable operation or simply burning out the socket due to a fair amount of heating.

If the block is strongly Chinese, and the wires from it are thin, then it may not be enough.
It also depends on the VRM layout on the card itself. Different connectors can power different phases. Without connecting one of them, it is quite possible to leave the memory without power.
