Will changing the range of network IP addresses from 192.168.xx to 10.10.xx increase the level of information security?

If I use non-standard IP addresses, will this increase the level of network security or are there scanners that will find equipment on the network regardless of its address?

Well, if your network is a complete mess and users can uncontrollably turn on their devices - yes, it will increase it a little . Because 192.168 is very often used as a "default address" in a great variety of Dishman network devices - I stuck such a balalaika into a network with DHCP turned up - and that's it, the user went through it.
There are a great many and varied scanners that look for equipment and find it even if it does not have an IP address. An example is winbox, a microtic control program that connects via poppy.
