Will “blank” pages on the site affect the issuance?

We are redesigning a website with many product pages. I would like to first refresh the design, and then deal with SEO texts for each page. Will there be any negative effect if at first the pages are without text, indexed, and then text is added within a few months?
And yet, the design is in a minimalist style, so the SEO text is under the cut on the 'show text' button at the end of the page before the footer. I saw this on several successful sites, but will such text be normally taken into account by search engines?
