Why upload all store items to the store?

Hello!

I worked on the web for many years, so some moments of mobile development cause misunderstanding...

There is a game, there is an in-game store, it contains ~ 100 items (game resources, swords, shields, knives, armor, etc.). For each individual user, some positions may be limited in number, some positions are presented to a limited circle of people, and some positions may have different content.

When it comes to the web, the user clicks on the desired position, sees the payment form, enters the details, after successful payment, the payment system sends a notification to the server and the user receives the position on his account.

And now the question...

As far as I understand, in mobile games that are distributed through official stores (apple store, google play), the entire catalog of positions must be placed in the developer console in advance. Why is this needed and can it be bypassed?

I didn’t check it in practice, but I read in articles that you can add one price list for a product, and what exactly you bought and what to charge - check on the client.
Why is this needed and can it be bypassed?

For monetization, why else) It’s easier to check the purchase, there are less chances for cheating, etc., etc.
