Why fly ntfs rights?

Periodically, when saving an excel file, the access rights on the file server are completely lost. The owner and permissions disappear. The problem appears only with excel files. Users only have rights to edit the file, not to change permissions.
Permissions on the file itself are inherited from the folder. To correct the situation, you have to make yourself the owner, go up to the parent folder and replace the permissions of child objects.
Has anyone encountered a similar glitch? Is there a way to avoid the permissions crash?
