On iOS7, my notes are synchronized automatically with the mailbox that is assigned in the settings. This is my Gmail box. And in the Gmail box there is a Notes folder, where all the notes from the iPhone are added. There, in this folder, there are thousands of these notes, i.e. all. Each note change causes a new (slightly changed) note instance to be added there. In a normal email client, such as ThunderBird or The Bat, not thousands are displayed, but only the latest versions of notes, i.e. what's in the iPhone. And if the iPhone is not there, then it is not there either. But you can go to the "All mail" folder or whatever it is and there will be all these thousands of notes, choose any.
