In IP telephony, ringing and beeps are usually generated by the telephone itself. Asterisk in the SIP protocol simply sends a Ringing message to the phone.

Although the devices generate "beeps", your problem is not related to this. The device settings will not help you here.
Pay attention to call-flow in such problematic calls, as a rule, the problem with continuing ringing after hanging up is connected to the network. In some place, an ACK from your device does not arrive in time to one of the devices, saying that you picked up the phone.
Dump such a call and look at the time and order of all messages.
