Which real-time video camera to choose for a DIY project?

Good afternoon,
This idea has been haunting me for a long time.

Decided to bring it to life. I plan to use a phone (iphone) as virtual reality glasses. But I have absolutely no idea which camera to choose. In my opinion, the ideal option would be the ability to transmit video over the wire, as this would reduce the delay. But googling does not bring any results. Can someone tell me if there are cameras that connect to an iPhone and transmit an image over a wire? Well, or wireless transmission, but with the minimum possible delay.
