Which operating system to choose for a web server?

I'm going to install the LAMP stack .
The choice is before choosing an operating system that will eat less RAM.
CentOS, Ubuntu Server or Debian?

It all depends on what will be performed on the server and what are the requirements for the software. If these are ancient versions, then CentOS, if stability is needed, then Debian. If you need the latest versions of software, then Ubuntu is better.
To understand what it is about, try to compare which versions of the same php | MySQL, python are included in package managers by default. Yes, you can always connect a third-party repository and pull up a fresh one (hello from CentOS and Debian), but then you can forget about the "stable" and "tested" distribution argument.
My recommendation is Ubuntu. And versions of the software are more or less recent; find help on setting up Ubuntu on the Internet much more (the same askubuntu.com)
