Don't pollute your system with native packages (via homebrew). The server should be isolated when needed - then you pick it up and work. No need - cut down. And the server for development should be as close as possible to the environment in the future production. All of the above is present in Vagrant - an isolated virtual machine, you can build (or find a ready-made assembly) for a specific environment. In it, you can also experiment with system settings, twist the kernel and do anything in general without the risk of harming your native OS.
2021 Update:
I take my words back. I have been working with Laravel Valet for a long time, all packages are installed using Homebrew. Neither Vagrant, nor Docker, nor any MAMPs came close in terms of speed, convenience, and minimal use of resources.
