Which CRM to choose for large format printing?

Good afternoon. We are engaged in large-format and interior printing, we have our own printing house.
We came to the issue of automation and order management.
In our industry, there are several nuances in terms of product calculation.
In particular, there are key activities and services that need to be automated.
A typical sales scenario looks something like this:
1. The client needs a poster or banner of a certain size. There are product dimensions (height and width), the number of products, the material on which the print will be made, and the print quality (Interior or wide format). A miscalculation of the product is made depending on the material, quadrature and quantity, and additional. services. Managers search and process applications. After confirming all the data, the manager sends an application to the production department.
2. The production employee sees a new print request, installs the necessary material in the machine and starts printing the product in the specified quality. There are also a number of typical services such as installing eyelets, gluing pockets, which are handled by a production worker.
3. In pre-print preparation, it is possible to design a layout for printing, the designer is responsible for this, and if the manager indicated that a design layout is needed, then the application is sent to the designer and then to the print shop.
Just like adults, I would like to have document generation, planning, inventory control and other goodies that are implemented in most CRMs.
For us, the key point in using CRM is the ability to install and work on your local or colocation server. SaaS is also possible, but there is some fear.
You also need the ability to attach files to the application, sometimes large volumes (less than a gigabyte).
There are several systems in mind, but not a single one has a complete correspondence :(
