Which cameras to choose for video monitoring of assembly / disassembly of goods?

Task:

Workplace in a warehouse, medium-sized table. it collects / disassembles parcels.
Video recording of the process is necessary, the goals are:
- fixing the assembly to exclude claims from the client for incompleteness - fixing
the disassembly to exclude claims for substitution / damage to the sent
unloaded on the table, and vice versa), and a close-up that controls the actual working area of the table. If necessary (for example, an employee sees a damaged product) - it is desirable that he can demonstrate it to the camera close enough to fix the label of the product and the nature of the damage.

It is highly desirable that the quality be more or less decent, and not solid squares with which you can’t prove anything to anyone.

What comes to mind in this context:
- one camera is high for a general shot
- one/two cameras are closer to the working area
- perhaps some simple monitor, and/or a marked place on the table where you can bring the part to fix a detailed examination
- perhaps some additional light

Naturally, I want:
- everything was digital
- not too expensive
- did not require maintenance and worked

Questions:
- what cameras to take (general plan, close-up) - resolution, FOV, models?
- what other hardware is needed (for example, a small PC with an SSD for the system and a couple of thick HDDs in a raid for video recording), UPS, anything else?
- what software
