Questions:
1. Does it make sense to buy a server processor?
2. Will there be a big increase if you roll windows on 1ssd, and install programs and everything else on 2ssd, or is the difference not big and is it not worth buying another 1n ssd?

Smartly and ideally, it is done like this: on one ssd (choose a better manufacturer) Windows + Programs, on the second ssd (here you can get by with cheaper options) working files and cache (you can drag the Users folder here, and not keep it on the first ssd , google how). HDD is your archive, where files are located that do not require constant intervention, just storage, throw off completed projects there.
I will not advise on this. I’ll just say that it’s not worth overclocking, unless you are going to play games.

Only i7 and don't even consider i5. Forget it. If you want to save money, it's better to save on the card. For i7 work, that's what the doctor ordered.
