Where can I find a coding mentor or communities for collaborative development?

Are there any services / platforms where you can find a programming mentor, ask for advice. Or perhaps there are some open-source projects for beginners?

There are too few details in the question - your experience is not clear. Are you just starting to enter the profession or are you already familiar with the basics.
On the question, I can assume the latter, but if I'm wrong - clarify in the comments and I'll update the answer.
Leading developers of OpenSource projects almost always welcome new participants. Even if you just fix a typo in the documentation. Fear of starting is quite common, which is why you will see special messages in some OpenSource projects:

Imposter syndrome disclaimer: I want your help. No really, I do.
There might be a little voice inside that tells you you're not ready; that you need to do one more tutorial, or learn another framework, or write a few more blog posts before you can help me with this project.

I can't recommend any specific project - you didn't specify any programming languages or direction that you are interested in. But GitHub is a great place to look.
Now, as for mentors - now there are enough sites with similar offers, I will give a link to a couple of them:
Learning to program with a mentor on an individual basis ...
Codementor - Find a mentor to help you in real time
But before you pay money, think about whether you really need it .
Communities of programmers where people share their experience are enough now:
Back to the question of mentoring. As for the free options, the FSSF ( F# Software Foundation ) runs the F# Mentorship program twice a year for free . In order to participate you need to join the FSSF, read more here and then apply here .
Registration for the autumn session opened today and will last until August 31. For obvious reasons, a lot more students register than those who want to be mentors, so don't be discouraged if you are not selected.
F# is an amazing language, and if you are not already familiar with it, I advise you to pay close attention to it. Even if in the future you do not have to work with it, then knowledge of the functional approach will definitely not be superfluous.

The most intelligent mentor is the one who was assigned to you by the head after employment.

You can ask here for example.
If there are SPECIFIC questions.
And a personal mentor .... for free?
Why do you need a mentor?
Why does he need you? Think?
As an option - full-time work as a novice programmer in a company where there are experienced colleagues.
It’s clear why a mentor needs this - because the company urgently needs to pull you up.
It's efficient.

There are many such services, but the price tag will bite for a mentor, about $ 50 per week and this is the most minimal. If you are ready, please search, just like that and drive in “programming mentor”.
You can think wider and then the Toaster, where you are asking questions now, will be a mentor if you know how to ask questions correctly and look for answers.
It will be difficult for a beginner to understand opensource and there is nothing special to offer, so come up with a project for yourself, google incomprehensible things, and if you can’t find anything, ask a question.

In short and for free:
Of.documentation, Google, PC processor, compiler, open source on github, your brain.
If this is not enough, reformulate the question so that your goal is clearly understood.

Opensource is always open for beginners, modify some VLC and practice, but don't waste time on curators.
