Where are environment variables set in OpenServer?

Hello! Studying the book "Mastering Yi" by Charles R. Portwood II. It describes the setting of environment variables and, using the Apache example, the SetEnv APPLICATION_DEV dev variable is written in the VirtualHost Block block. The problem is that I work with Open Server, but I have no experience with setting up Apache and I don’t understand where to set this variable. Please tell me where to look for this VirtualHost Block or where to set this variable? Please don't drink too much :)
