Let's say that I use a VPN in order to surf the Internet, tk. I don't trust my ISP. I rented a server in Germany and configured OpenVPN on it, in fact, I sit through it. How does this fall under the law and what happens if I continue to do this?

It will not affect in any way, because the protocol itself is not prohibited.
But if you do a public service, you will already have to comply with the law in relation to customers.
