Personally, I have never seen such literature, and this is understandable - antivirus is an important element of the computer's security system, and therefore it is undesirable for it to show its guts to the general public, giving malware authors the opportunity to figure out the protection device in order to bypass it. For this reason, in theory, there should be no open source antiviruses.
Nevertheless, they are. Google finds several names: Clam, GPM Antivirus, Nixory, maybe there are more. Since they are open, somewhere (perhaps on a github?) Their program code and description should be in a form accessible for study. Is it okay?
