It's clear that it would be nice to read the RFC, but perhaps there is a book where everything is written for a "deep" understanding of the protocol

J. van Meggelen, Yard Smith and Leif Maadsen "Asterisk is the future of telephony".
There is a small chapter in this book about SIP and RTP (since both protocols are related to each other). Enough for an initial understanding, and if any questions are not clear, here the articles of experienced telephone operators will help: both Russian-speaking from Habr and English-speaking.
