What to read about project planning?

I feel that when I have another idea, I lack the exact formulation of goals for its implementation. I am very much immersed in the detailing of the task, and behind this the very essence of the idea often disappears. When I just immersed myself in my first pet-project, everything was simpler: I did it according to the principle "I came up with something - embody and detail it on the fly." Over time, experience has emerged and personal requirements for projects have increased. I don't think there's any way to do this without some planning.
What are some helpful approaches/resources/books/articles for planning and designing ideas? I hope I managed to get the point across.

Start by developing an MVP version of your product. Then increase the functionality.

Requirements are collected first, more often in the form of user stories. Then, based on the requirements, the functionality is written. The requirements and functionality are compared and it is checked whether all the requirements are covered by the invented functionality. A prototype is being made. It is tested how usable it is to use and whether all the features lead the user to his requirements. If everything is good, it is cut into small pieces that can be done weekly and done. It is desirable to approach iteratively and not incrementally. It is not necessary to bring to the ideal some piece of the project, then another. You need to immediately make a product that will cover the basic requirements as quickly and cheaply as possible, and then improve usability every week and finish the rest.
