What to put on Intel Xeon E5-1620v2 4c/8t 3.7 GHz/3.9 GHz RAM: 128 GB DDR3 ECC 1600 MHz?

Good afternoon.
I want to take a server in the configuration below, for 300-400 sites for wordpress and joomla, phpbb. Attendance is still small 10-30K per day. Does it make sense to take on these tasks and how best to set everything up on one without vps virtual machines (nginx + php separately, MySQL separately).

Instead of a powerful machine of such performance that costs decent money, it makes sense to take a couple of budget ones, say Xeon W series or Intel i3, i5. This way you will save money and you will have a safe and stable system.
Pros: all services on different machines with always fresh and automated backup, mirrors in case of a crash, speed. After all, you forgot about the bottleneck of the server - the disk. Having one powerful dedicated server with 100+ sites, nginx, php, MySQL and so on, sooner or later the brakes will start due to lack of disk bandwidth. And in my example, MySQL is on its own disk, processor, RAM, php + nginx on its own, a file server for backups on its own.
