What to learn to pick up mail?
Situation: there is an OS, Debian.
Purpose: to make a mail server (POP3, SMTP) + web interface.
Maybe someone has a link to some working manuals?
I tried to do according to the manuals that I found myself (Exim + Dovecot), but it didn’t really work out. The maximum that I could do was to send a message that got into Gmail's spam.
Tell me where to start and what to read? Do not offer manuals for Exim or Postfix, you need a short description for deploying the service.

The question for “raising mail” is not only about the server itself, your letter got into spam on gmail rather due to the necessary records in the DNS and (possibly) not a static IP (including the lack of a PTR record for this IP). So if you are not going to “play around”, but are going to live with this mail, then I advise you to sort out this issue as well.
