What to choose: ESXi ->SSD and forwarding NVMe to VM (without RAID-controller) or Proxmox (raid1)?

Welcome all!

Help advice. A server was ordered from Hetzner for 1s migration. Configuration footprint:

Intel Xeon 18 core, 128Gb Ram
2 SSD Nvme 960 Gb
2 SSD Datacenter 960 Gb
2 SSD 1Tb.
There is a question about choosing a hypervisor. Planned 3 vm
1) mikrotik chr as a gateway. there will be 2 vm behind the NAT
2) 1 vm - RDS (win srv 2019 std)
3) 1vm - 1c8 + ms sql (win srv 2019 std)
Bases 1c8 total 5 different confs (utp, zup, kup)
Advise the hypervisor for this conf. I understand that if Proxmox, then you need to collect everything on a software raid. ESXi in such a config will have to be installed on a single disk, and then forwarding nvme as separate disks in 1s with sql and collecting using windows. To what extent will this be the right decision? Please advise on how to make the right decision. There will be up to 30 users per server.

Well, the forwarding of pieces of disks is clearly past.
If you don’t know how to cook, refuse this server and order one the way you know how to cook, it’s not expensive, but then it will result in big money savings
