There is no ideal.
Each task manager is tailored for a specific range of tasks.
redmine is for programmers. repository management, nested tasks, versions,
megaplan projects - for ordinary employees, and with the functions of a corporate portal.
etc.
every group of people wants to see their features, every product is overgrown with plugins and extensions.
if it is not possible to extend the product itself, it is extended by browser extensions, etc.
how to create one that takes into account all the functions and needs - no one knows.
if there are too many functions, it will simply get confused.
If you solve the problem globally, then in theory you need some kind of task manager constructor based on user preferences. For example, a set of modules and the relationships between them.
If you ask me which one is ideal, then for me it is redmine.

3. It's easy for me to extend its functionality with plugins that are easy to write.

Most of them are similar ... I even had to write my own for the internal needs of the company. And I don't think it's ideal. Either it will be too busy, but it will suit everyone, or it will be simple and light, but the functionality will not be enough in some areas.

Perfect - it should be for you. You should not abandon it a month or two after use with all the accumulated baggage. It must be cross-platform. Simple. And a little better than what is on the market ..)
