I have been working with React for about half a year, but there were no projects on it on github. Therefore, I did this: I took my site as a prototype and put the maximum of what I know into it. Let the site itself be very small, but you can figure out how to shove this or that technology to show that I can work with it and how I do it.
Well, what technologies to use depends on your knowledge) In fact, a must-have: an OOP approach, the correct use of life cycles, working with state and props, asynchronous functions, react-router, react-redux. I would call automatic tests next in importance. Well, then there are probably purely subjective moments, such as choosing a way to work with styles, TypeScript, and so on.
