What's wrong with Linux Kernel 5.12.5?
Fedora 34 installed a new kernel version 5.12.5 and as a result the system started to drop dead, I had to roll back to the previous kernel! What to do?

Fedora 34 couldn't install kernel 5.12.5 on its own because 5.11.21 is the last thing Fedora 34 has in official updates:
[[email protected] ~]$ sudo dnf update
Last metadata expiration check: 2:47:11 ago on Sun 23 May 2021 07:50:11 AM BST.
Dependencies resolved.
nothing to do.
Complete!
[[email protected] ~]$ uname -r
5.11.21-300.fc34.x86_64
[[email protected] ~]$ cat /etc/redhat-release
Fedora release 34 (Thirty Four)
[[email protected] ~]$
So with installing kernel 5.12.5 obviously "playful little hands" [re]tried.
ADDED: although Fedora 34 could install kernel 5 by itself. 12.5 But only if the testing repository has been enabled . For stable version 5.11.21 latest. Well, if you allowed yourself testing , then Evil Pinocchio to Yourself.
