What mixing is uefi or bios running from?

From what mix? Is it possible to write your bios different from the standard one? Where, besides the uefi specification, can I get acquainted with the boot structure?

The entry occurs at FFFF:FFF0H - the so-called Boot block area. Everything is pretty detailed in the intell spec. However, it's complicated.
