The minimum is knowledge of a programming language (the best option is Rust or Purescript, but now C, js and python are fashionable), and direct hands, so as not to burn the device with something wrong by inserting it.
At a more serious level, you need to be able to work with message queues (usually MQTT), understand competitive programming (Erlang, Rust), understand security and imagine what vulnerabilities are. As well as electronics.
At a very advanced level - acquaintance with linear logic and proof assistant systems, since very high reliability can be required in this area.

There is a book "How to Become an Embedded Systems Engineer", I think it will answer this question. In general, this is electronics, circuitry, programming in asm / c / pluses. There are special courses on Coursera and Edx.
upd: If wearable electronics ios / android is considered, then study swift / obzh C or java.

IoT is the buzzword these days. It is molded on everything in a row, as relatively recently the prefix "nano" was molded. And such a specialization as an IoT developer simply does not exist.
