Before catching a spammer, you need to be able to:
1 understand what is written in the logs - who sent what to whom, etc.
2 understand how to work with the email queue in Exim, how to view / delete a letter from the queue, etc.
After that, having logs, and the ability to, if necessary Inspecting the message queue in EXIM will not be difficult for you to figure out what is happening and who is sending the spam.
