What is the optimal server configuration?

I am launching a project, something between a crm and a todo list, for a couple of thousand users, with constant activity. It is clear that shared hosting is not an option here. There is no money for his iron yet. It remains to rent a server.

And in order not to overpay for unused capacities, I would like to ask people who have already launched similar projects (facing similar tasks) for advice on the optimal configuration?

You can look towards Amazon - there you can find a cheap solution .. (at the start) + payment for raising a new instance (automatically) when the load increases. (this includes payment for the time the instance is running..)
