What is better to use: rel="canonical" or one single url?

Hello!
The question is:
There is an online store url structure - /category/subcategory/product
What is better to use for the product page - rel="canonical" for duplicate product pages or make one single url for which the product is available (in terms of SEO)?

canonical is an artificial crutch that even its inventor Google doesn't always follow.
If it is possible not to produce duplicates, this is ideal. Next comes 301 and by a wide margin, in last place pushing canonical and robots.txt cams.
