What information about users can the holder of the VPS on which OpenVPN has installed?

Good evening. Please tell me what information hypothetically can the admins of VPS servers with VPN installed on the bot get?
Let me explain the situation, there is a country in which certain resources are blocked, there is an indefinite number of friends and OpenVPN with an encrypted connection and logs going to / dev / null.
Suppose someone is interested in the traffic from this VPN (because of liking a post with a quote about some provisions of the constitution, for example) and wants to know who dared. Sends a letter to Munich with a request to open the logs. For some reason, VPS holders go to meet him and provide logs. What information will be available to captain x in this case?
Logs with IP information and connection timestamp, and the same for outgoing traffic from the server, or something else?
It's just that I'm interested in projects like zaborona.help (although I'm extremely glad that there are such people, I'm already proud of humanity) are not afraid of the consequences of the actions of strangers on the network, sticks will first of all fly at the server holder?
Ps I know that there is only a white list of IPs that are proxied (everything except for email, VK and Yandex goes without proxying), but even for a post or like in VK you can work up a criminal ... How to be?

Anything your ISP might know, as if you don't have a VPN.
The output from the VPN server to the outside is not encrypted. Therefore, where you went (and why, if there is no https there) is not a secret for the VPN server.
And your real IP address is known to the server
. That is, the point simply shifts.
So your provider knew all the information.
Now the VPN provider knows.
