What happens when you change your domain registrar?

I am changing the registrar from gandi to reg. I want to transfer a domain that has very decent traffic.
When transferring, is it possible that the domain will stop responding? Or, any other problems are possible?

It all depends on where and how the DNS records of this domain are stored.
If the new registrar allows you to copy them to yourself\configure your third-party DNS servers for the DNS zone before the transfer process is completed, then it will happen without stopping.
Plus, all the same, DNS records end up in the caches of providers and users, and this further increases the "seamlessness" of the transition.
I hope that your current registrar is not your hoster, because then you also change the hoster in theory.

usually DNS is transferred, if you don’t screw up with a daw in the wrong place,
it’s easiest to try on an auxiliary non-critical domain
