What happens if the ampere is less?
There is a switch, it accepts input 5V 1A, and the power supply output 5V 600mA. Will it withstand if all ports are turned on and what stability will it have?

There will be undervoltage and unstable operation of the switch if the switch eats too much. With a high probability everything will work without problems.
If not too lazy, you can try, but you should understand that there may be unpredictable glitches in operation, and the power supply may overheat.
There is some chance that it will work. I met switches that worked without problems at half current. Again, depending on how to load, if it has a minimum number of clients, this will reduce the current requirements.
