What good examples of organizing a knowledge base in the form of wiki articles do you know?

Hello!
We plan to implement a knowledge base in the organization for "storage of knowledge" (in the form of wiki articles) for various projects (not just IT). There will be several articles for one project. Please tell me the existing examples of knowledge bases in which you can see a well-organized structure of articles. And what self hosted tool would you recommend to use?

UPDATE
At first, it is planned to fill the knowledge base with projects on machine learning and data analysis. In the future, when the system takes root, it is planned to add projects from other departments not related to IT.

A good knowledge base should be structured. The vast majority of Wikis I've seen are a mess with nothing to be found.
