What equipment to choose for network simulation?

We set the task of modeling a simple local network of 2 buildings through the NetCracker program for training purposes. But there were some difficulties with the choice of equipment. More precisely, I can throw any switches into each other, but I would like to understand some things that will be needed in the future.
Let's say each building has several floors with several rooms. Each computer must be connected at 1 Gbps. Approximately the number of computers on the floor will be 50+. Computers should be limited to vlans. One switch for 24 ports is not enough. What to do in this situation? Stack 3 ZyXEL GS1920-24 switches (example) and connect 1 twist cable to the first floor, where will the router be?
Further on the first floor there is a router, for example ZyXEL ZyWALL 310, which is connected to 2 providers and keeps VPN between two buildings. But here there are doubts about the speed, since he is unlikely to digest 200+ gigabit computers.
I would be glad for any clarification about the network diagram. Thanks in advance!

for 200 gigabit avg computers, the download will be 3-6 GB with peaks up to 10 GB, I would throw 10 GB optics between offices and everything would be zbs
Floor switches - and these should be stacks - must be connected to the aggregating stack of switches in the server room with 10G links, so that these trunk links would go from each switch to the stack of switches in the server room. Thus, if one switch "falls" for you, then the rest work on other links. Further (if you also have routing between VLANs), you must either connect a stack of aggregating switches with a powerful router (or stack) or a routing switch with 10G links.
However, the final scheme is very dependent on the nature of the traffic in the network. What kind of traffic is this - is it floor, interfloor or floor-server? It is also an important issue from the point of view of building highways. :)
If you put experiments in the virtual space - the cisco packet tracer + GNS3 simulator (Graphical Network Simulator - more serious simulation).
GNS3 is great for modeling routing, but it lacks the ability to simulate switching on it. Haven't learned how to emulate the work of asics.
