What equipment and software to choose for "multi-room"?

There are 5 rooms in the house with installed ceiling acoustics (2 speakers of 8 ohms in each room). From the speakers, the wires go to the "server" and to the audio socket on the wall (to be able to connect the sound source both directly from the room and, in the future, from some kind of multi-room system in the "server").
Also, at least one UTP cable is connected to each room.
I would like to make a system out of this that allows you to choose (via a phone / tablet / computer on your home network) what to play (music from a file server / computer, etc.) and where to play (in which room).
From what we managed to find, Sonos has a ready-made solution , but it's quite expensive (from €349 for one device, and you need 5 of them).
I also looked in the direction of Apple TV + HDMI to audio converter + sound amplifier (for example, this one ). It's embarrassing that in this case everything is "sharpened" for Apple.
I would be grateful for any advice on the implementation of this scheme. It is highly desirable without the use of wifi (wires are laid with a margin).
