What do you need to study in electronics and microcontroller programming for employment?

I am 24 years old. Two years ago I graduated from the university with a degree in Instrument Engineering.
I have been working as a layout designer for several years, but with the growth of knowledge in the field of front-end, I begin to lose interest in development in this area more and more.
For some time now I have been thinking about trying my hand at electronics and microcontrollers in particular.
But I am at a loss in the choice of materials for study. It is clear that you need to start with TOE. But to what extent is it necessary to start working with MK?
Considering the vacancies related to MK, I am convinced that work experience is needed everywhere - how can I get it?
It is not clear what to do with practice. What do you need to buy to be able to practice? Do I need to purchase microcontrollers myself to study it, or will some emulators (and which ones) suffice?

If you program MK, then there is no point in repeating TOE.
You need circuitry at the level of how a transistor, diode, op-amp works.
For this, the Art of Circuitry .
This book is easy to read, like fiction.
If you need more formulas Semiconductor circuitry . It is good to read them in parallel.

Buy an SDK for any microcontroller (STM32 for example) and make simple projects on it like: ACS (access via RFID cards), remote monitoring and control (inputs, outputs) via Ethernet, Working with displays, also study working with sensors by interrupts .
Now AVR is gradually being replaced by ARM, but it's better to know both - since a lot of devices are assembled on AVR and most likely you will have to modify their firmware.
