I'm moving to another company, what needs to be deleted on the working PC, and specifically from git, so that after me there is no my account data?

If the question is only about git, then C:\Users\%username%\.gitconfig
These are global git settings
Don't forget to delete your keys C:\Users\%username%\.ssh

Excuse me, but what is the connection between your work PC and specifically Git?
If there is a folder on your computer, delete it, damn it, but it's useless if there are remote repositories.
But ideally, just reinstall the system on the last business day.
Although in most cases, the system will be reinstalled after you leave.

gparted.org/livecd.php - this tool doesn't care what's on your computer.
