The simplest thing to put on the munin server. It has a bunch of built-in plug-ins, including those for CPU, memory, network...
It's easy to set up and doesn't require any special settings.
Nagios + nagiosgraphs. From a cannon to sparrows, but with a web interface.
You can collect statistics using nmon, then build graphs using nmon analyzer. Or atop. This is the case if it is the collection of statistics that is needed, and not monitoring.
