There is Ubuntu Desktop 12.04. What can you use to build graphs or just collect statistics on the use of CPU, memory and other things?

The simplest thing to put on the munin server. It has a bunch of built-in plug-ins, including those for CPU, memory, network...
It's easy to set up and doesn't require any special settings.

You can collect statistics using nmon, then build graphs using nmon analyzer. Or atop. This is the case if it is the collection of statistics that is needed, and not monitoring.
