Possible option: your SQL server (called, like, "database engine"), substituted along with WSUS, ran into the limitations of its edition. Look at the sizes of its files, clean up (WSUS) and compress (SQL) if necessary.
Better yet, replace it with a separately installed MS SQL - so you will be able to manage it through the GUI (SSMS).

Look at the load on the hypervisor, how many resources other VMs take, how resource reservation is configured for each VM, etc.
Something is clearly not right. In the virtual machine 2008R2, which was compressed to disgrace, in 2.1Gb RAM, it coped quite well with wsus - just give me disk space.
Do not be afraid that Windows ate all your memory. You clearly did not study and were not at Microsoft courses. Memory is freed when needed, just like in Unix-like systems.
