What a field fields! in Excel and how to edit them?

In the table in a regular field (let it be A10) there is a value =MID(fields!A1;9;1) in the English version =MID(fields!A1;9;1).
Essentially, the formula takes one character from the value of the fields!A1 field. The question is what are these fields fields! where are they edited?

fields is the name of the sheet and A1 is the address of the cell on that sheet
