VPN PPTP overrides internet settings, how to make VPN work only for some hosts?

There is a VPN PPTP connection login and password. There is a Debian 10\Gnome machine. I'm trying to set up a connection on linux through the Gnome pptp plugin, and it seems to be successful. But this VPN connection overrides all network settings including DNS, all traffic now goes through the VPN.
I need access to only one host there. That is, as I see it, for a node named vpn1.server we go through VPN and only for this node. How can I set up Linux so that the VPN works the way I want?
