Fire up iptables.
There are specialized distributions for creating a Linux firewall.

As a rule, in this case, two network interfaces are inserted into the Linux computer (for example, one is built-in, the second is in the PCI slot).
You can get by with one network interface - but only if the provider does not use DHCP.
Next, you need to build a network. Usually this requires a switch; You can also use the WiFi router in switch mode or NAT mode.
On Linux it will be necessary to lift NAT. You probably need a DHCP server. Well, programs for servicing the internal network are optional. It would be nice to close access to programs (to their ports) from outside via FireWall; except for those programs that d.b. accessible from the outside (this makes sense if the provider allows access from the outside - from its own network or from around the world).
The meaning of the word "DMZ" in this context is unclear to me.
Upd: Below it is advised to use a "hardware router". This is a good idea.

the server will be in the DMZ.

Before using terms, clarify their meanings. You will not have a DMZ, because you will not have intermediate servers.
On the question - ask Google what Mikrotik is :)
